Sweet Potato "Greek Fries"

You made it.
We made it. Now I'm hungry.
And I really really really love sweet potato and Greek fries - so here we are. I'm ending the week off right with this deliciousness.
I've been experiencing some digestive issues this past week and I'm trying to figure out where they came from. For those of you that know me know that my body is super sensitive to foods like wheat and dairy. Not only am I sensitive emotionally, but my physical body is as well. It doesn't like anything that disrupts its natural flow. It's a constant struggle.

This week, I've been doing some research on how to improve my digestive health. I've been reading books, looking online, and have become recently interested in taking a holistic nutrition program. I love the healing benefits of food and I believe that food is our best medicine.
In my research, I learned more about the benefits of sweet potato. So let's get to it.
Sweet potatoes are not only delicious, but they're super helpful when it comes to digestive health. According to Medical Medium in his book "Life Changing Foods", they promote good bacteria in the stomach and intestines, while removing unproductive bacteria such as mould.
Most of our bodies experience a lot of inflammation from the "foods" we eat such as, sugar, processed foods, wheat, dairy, and eggs. Sweet potatoes are able to alleviate the narrowing of the intestinal tract due to the inflammation says Medical Medium ⏪ vitamin A. I believe that a lot of illnesses are created due to chronic inflammation because it puts a lot of stress on our bodies and immune systems. Our bodies are unable to function to their best ability and therefore, they are unable to do what they do best - heal themselves.
Sweet potatoes contain vitamin C that really help the elasticity of the skin and gives it a healthy glow. Because who doesn't want nice skin?
It has vitamin D that helps build strong and healthy bones. Because we all want to be able to move with ease.

The magnesium found in them is really helpful when it comes to stress relief. Stress has become a normal part of life these days. We hold stress in our stomachs (near the solar plexus chakra) and this can create more digestive problems. The magnesium is great because stress is the root cause of many illnesses. In western society, we live in a fast-paced world with many roles and expectations. We often forget to take time for ourselves and do what we love. I do, too.
Sweet potatoes also remove cancer-causing estrogens from the body that interfere with normal hormone functioning says Medical Medium. These come from plastics and chemicals found in our food, water, and products we use everyday! I believe it's super important to look at the ingredients in your shampoos, body wash, body lotions, toothpaste, deodorant, etc., as these are all absorbed into the body. They disrupt our natural system because our bodies' don't know what to do with them.
This interference can effect how well our digestive tract functions.
It's amazing when something tastes great annnd can heal your body. I'm into it.

RECIPE: SWEET POTATO "GREEK FRIES" FRIES: - 1 sweet potato sliced (I buy mine already cut) - avocado oil - 1 tbsp himalayan salt, black pepper, oregano, parsley, and thyme - sriracha sauce - cashew cheese (cubed - I use "Nuts for Cheese") SAUCE: - 1 cup cashews - 3/4 cup water - 1/2 cup cucumber (shredded) - juice of 1 lemon - 2 garlic cloves - 2 tbsp olive oil - 1 tbsp dill - 1 tbsp parsley - 1 tsp himalayan salt
DIRECTIONS:
1. Preheat oven to 425. Line baking sheet with parchment paper. In a bowl, mix sweet potato slices, avocado oil, and spices together. Place on baking sheet and put in oven for 35-40 minutes.
2. To make the sauce, add all the ingredients to a high-speed blender and blend.
3. Cut cashew cheese into cubes. You can crumble feta if you're not vegan - I think that would taste delish.
4. Once fries are done, put them on a plate and top with cheese, sriracha sauce, and fresh parsley or oregano if you wish. Dip your fries and enjoy!
