Vegan Tacos

It's TACO tuesday!
Tacos are delicious and this recipe is super simple to make. It's been a busy week full of many changes, so these were perfect to make for dinner this evening.

A lot of things are happening all at once and it's been a stressful couple of weeks. There have been many endings and even more new beginnings and opportunities. Last week, I received the news that I was no longer needed as a dog walker. Initially, this news was upsetting because I have become so attached to the dog. But, I was told I can visit him anytime, so that helps. I trusted that every ending is actually a new beginning. A few days later, a job opportunity was presented to me.
Crazy right?
I know, I sound weird when I talk about how everything happens for a reason, BUT IT DOES. In my life, anyways. Even though I'm not entirely sure what the reason is for this new opportunity, I'm having faith and trusting in the magic of new beginnings. The synchronicity was too obvious to ignore.
I'm just going with the flooow.

I'm the type of person who listens to my gut and follows my heart in any situation or decision. No matter what it is. I trust the guidance of the universe. I trust that everything has a purpose. I trust.
Sometimes, it's smart to be logical. Sometimes, it's smart to be emotional. Both are ok.
My life may be a little chaotic now. But chaos means our lives are changing. Most people want to avoid chaos because it's uncomfortable. But you guessed it, I love chaos. Chaos is magical. And I know everything is going to be ok.
It always is.

RECIPE: VEGAN TACOS

WRAPS:
- 1 cup chickpea flour
- 1 cup water
"MEAT"
- 1 can navy beans (today I used chickpeas)
- 1/2 cup walnuts
- 1 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp oregano
- 1/2 tsp paprika
- 1 + 1/2 tsp cumin
- 1 tsp black pepper
TOPPINGS:
- avocado (smashed)
- green onion (chopped)
- salsa
- sauerkraut
- anything you desire!
DIRECTIONS:
1. Mix chickpea flour and water in a bowl. In a small frying pan on medium heat, spray with avocado oil and put in 1/3 cup of chickpea mixture. Cook each side for approx. 2 minutes. Repeat.
2. In a large frying pan over medium heat, warm up navy beans and walnuts for approx. 3 minutes. Add in spices and a splash of water. Cook for 7-10 minutes.
3. Prepare toppings.
4. Put together your tacos however you would like and enjoy!
