Summer Salad with Hemp Seed Dressing

Happy Monday y'all!

Hope you all had an amazing weekend full of love and adventures.

Mine was quiet and relaxing and beautiful and exactly what my body was craving.

It started Friday evening with this salad.

I had the house to myself. I blasted music and had a little dance party. I sat outside on my deck in my super comfy hanging egg chair eating this bright and colourful salad, as I planned my next steps forward.

Saturday morning, I woke up bright and early and headed off to a sweaty yoga class with one of my favourite yoga teachers.

It's like the universe knew exactly what I needed. I know this sounds woo-woo, but I always trust that the focus of each class is exactly what I need in that moment.

This week it was hips.

I actually almost cried of happiness and gratitude. I'm always so amazed how the universe is always supporting me. I mean, I know it is and I know I have my spiritual team, but I'm always so thankful when it happens.

It was a slow class. It was the perfect balance. It was not too hard and not too easy.

It allowed me to come back to myself and my breath. It allowed me to forget all the other stuff and just be. It allowed me to focus and realign my goals and dreams.

I focused on being present in the moment and taking the day/weekend slowly. I had no where I needed to be at any certain time. I allowed myself to flow freely throughout the day doing whatever I felt like doing.

I stopped at Nature's Emporium to pick up some real food goodies. Almost everything I normally buy was on sale and it was amaze-balls because it can get expensive - vegan spinach dip, broccoli micro-greens, macrobars, avocado oil, sesame rice crackers, coconut water, pizza crust, and I bought bulletproof coffee for the first time to give it a try!

I stopped for a moment and felt like I was exactly where I needed to be. The alignment. The synchronicities. The support. The love. The encouragement.

Thank you thank you thank you universe. The amount of times I thank the universe in a day is ridiculous. But I'm just so thankful for everything I'm given and I know that everything is always going to be ok.

I made some delicious food this weekend from salads to smoothies to pizza and date balls. Having real food on hand helps me actually eat real food, instead of eating what is convenient. My digestive system needs the real food or it refuses to function properly.

Sunday was a day of more relaxation as I sat outside on my deck in my egg chair reading "You Are A Badass". Such a great book! Y'all should check it out.

The peace I felt within myself this weekend was beautiful. I hope to carry it with me the rest of the week.

RECIPE: SUMMER SALAD WITH HEMP SEED DRESSING

INGREDIENTS:

Salad:

- handful of kale

- 1/4 cup cucumber (chopped)

- 1 carrot (shredded)

- 2 tbsp red onion

- 5 cherry tomatoes (halved)

- 1/4 cup red cabbage

Dressing:

- 1 tbsp olive oil

- 1 tbsp apple cider vinegar

- 1 tsp hemp seeds

DIRECTIONS:

1. Prepare vegetables. Put in a bowl.

2. Mix together dressing ingredients in a bowl. Drizzle on top of salad. Enjoy!
